Our selection is a curated mix of classics, award-winners, rare finds, cellar-door exclusives, and New World creations. Each has been chosen to suit our timber bar, pot belly fire, earthy brickwork, and the invigorating fresh air of our unique location in Pemberton.
The Scottish whisky regions will be well covered, with whiskies such as Lagavulin and Bruichladdich from Islay, Glenfarclas and Glenrothes from Speyside, Springbank from Campbeltown, Talisker from the Isle of Skye, and Old Pulteney from the Highlands.
Pot still, malt, grain, blends, and whiskey with an ‘e’ from the Emerald Isle will sit alongside international award-winners, such as Sweden's Mackmyra, Taiwan's Kavalan, and Japan's The Matsui.
A curated collection of American rye and bourbon whiskey resides together, from classic Kentucky and Tennessee favourites, bottled in bond varieties, and those from small-batch family distilleries.
Naturally, we pay homage to our unique location, with a curated selection from across Australia. To assist with your selection, our posters, guides and staff will unfold the stories and tastes, and our flights offer a wonderful exploration of whisky and bourbon.

Jaspers’ menu has great gf and v options, and seeks to pair with craft beers, whisky and bourbon with fresh seasonal goods such as truffles, figs, finger limes, avocados, olives, fresh Pemberton marron, berries, hazelnuts, honey, and much more from local growers.
We offer a selection of fine Pemberton wines from Picardy, Below & Above, and Pemberley of Pemberton.
